Lou’s Salmon


Summer holidays are for grilling, family and friends. Here is a summer recipe straight from Lou's cookbook. Adjust as needed. Great when served with asparagus and crusty bread. Hope you can share it with loved ones around a table.





INGREDIENTS:

  • a large aluminum-foil turkey pan

  • a can of non-stick spray olive oil

  • 1 stick of butter or butter substitute (may need more)

  • jar of capers

  • 2 sliced white onions

  • olive oil

  • 2 lemons or oranges

  • 1 large jar of honey or Maple syrup

  • Old Bay Seasoning

  • Salt

  • 1 bunch of fresh Cilantro

  • 1 large filet of Salmon about 14 inches long


Preparation:

Spray aluminum pan with non-stick olive oil spray. Wash Salmon in clear water and pat dry. Place Salmon filet in aluminum pan. Spray Salmon with olive oil spray. Season generously with Old Bay seasoning. Salt lightly. Pour three ounces of additional olive oil into pan. Slice 2 onions into rings. Pop out onion rings into individual rings and place all over fish. Pour entire contents of honey (or Maple Syrup) onto filet. Slice lemon into thin rings and place all over fish & onions. Add a little fresh squeezed lemon juice to pan. Top the fish with one stick of butter.


Cooking:

Can be cooked on a grill in the pan or in the oven: If on the grill, use a hot fire and add apple, alder, or mesquite wood. Smoke for 10 to 15 minutes. Do not remove pan from fire until contents have liquefied and are bubbling hot. So, a hot fire is paramount. Fish should be flaky.


If cooking in the oven, use 400 degree heat for about 10 to 15 minutes. Make sure oven has reached this temperature before putting fish into oven. Do not remove pan from oven until contents have liquefied and are bubbling hot. Fish should be flaky


Serving:

Use metal serving spatula to cut fish into sections for serving. Place fish on serving platter or directly onto individual plates. Drain capers of all liquid and scatter bottle of Capers onto servings or whole platter of fish. Garnish cut fish with juice, cooked slices of onion and lemon/orange. Sprinkle Salmon with fresh chopped Cilantro.
